Made with creamy kefir, vanilla protein powder, chia seeds, almond butter, and sweet apricot jam, this simple overnight recipe comes together in just minutes. Ingredients

  • 1 Cup Kefir, 1%

  • 1 scoop vanilla protein powder (I use Thorne)

  • ⅛ cup Chia seeds

  • 1 tbsp Apricot jam

  • 1 tbsp almond butter

  • 2 Dashes cinnamon

  • 1 Dash nutmeg

  • 1 Dash Ginger powder

  • 1 Dash Turmeric powder

  • 1 Pinch Celtic Sea salt


Instructions:

  1. Combine Ingredients: Add all ingredients in the order listed into a jar or container with a tight-fitting lid.

  2. Shake: Secure the lid tightly and shake vigorously for 30–45 seconds until all ingredients are well combined and the chia seeds are evenly distributed.

  3. Refrigerate: Place the jar in the refrigerator and allow it to sit for at least 4–6 hours, or overnight, so the chia seeds can absorb the liquid and create a thick, pudding-like texture.

  4. Stir & Adjust: In the morning, give the chia pudding a quick stir. If the consistency is too thick, add a splash of kefir or milk and mix until desired texture is reached.

  5. Serve: Enjoy chilled straight from the jar. Add optional toppings like fresh chopped apricot, extra almond butter, or a sprinkle of chopped nuts for added flavor and crunch.
