Homemade Gut Health Gummies

This might be my weirdest recipe share yet, but I ensure you, one gummy will pack a punch and expand your cooking experiences!

Here is how to bypass more pills while saving you money! These homemade gummies are made with Trader Joe's antioxidant-rich Purple Juice blend (pomegranate, tart cherry, black mulberry, red grape, purple carrot, cranberry & blueberry) + unflavored gelatin. Gelatin is loaded with bioavailable (broken down) collagen to support gut lining integrity, reduce inflammation in the digestive tract, strengthen the intestinal barrier, and promote better digestion. 

Gelatin also provides glycine and proline for skin elasticity, joint health, and connective tissue repair. The purple juice adds a powerful dose of polyphenols and antioxidants for immune support, hormone balance and exercise recovery. 

Fun, chewy, naturally sweet, and way better than store-bought!

Servings: 48 


Ingredients

  • 1 full bottle Trader Joe's To the Power of Seven Purple Organic Juice Blend (≈ 33.8 fl oz / 1 liter)

  • ½ cup unflavored gelatin powder (about 8 Tbsp / ~64g)

  • Juice of ½ lemon (≈ 2 Tbsp)

  • 3 tsp apple cider vinegar

  • Pinch of sea salt

  • Optional for sweetness: honey or maple syrup


Instructions:

1. Add all ingredients except gelatin into a blender and mix until fruit puree is smooth. Pour puree into a small saucepan.

2. Sprinkle gelatin in, one tbsp at a time, and whisking after each tbsp so that the gelatin does not clump up. 

3. Bring mixture to a low-medium heat and stir constantly until gelatin is completely dissolved. Do not bring mixture to a boil. When gelatin is completely dissolved, turn off heat.

4. Place into fridge to set, until liquid comes to a solid. 

5. Cut up gummies in 6 x 4 rows into cubes.

🥥 I've also tried this with coconut water and 1/2 juice. Tart cherry juice, cranberry, or grape would work  just fine!
