This week's recipe is Autumn Protein Muffins. Made with ripe bananas, fresh apples, creamy Greek yogurt, and warm cinnamon, these muffins are naturally moist, lightly sweetened with maple syrup, and boosted with protein to help keep you full and energized. They're perfect for busy mornings, lunchboxes, post workout snacks, or enjoying alongside a warm cup of coffee or tea.

Unlike many bakery muffins that are loaded with added sugar and leave you hungry an hour later, these homemade muffins combine protein, fiber, and complex carbohydrates to provide longer lasting energy and satisfaction. The combination of fruit, Greek yogurt, and protein powder makes each bite both nourishing and delicious. Proving that healthy baking can still taste like comfort food. Lastly, these muffins freeze beautifully! Wrap them individually and freeze for up to 3 months. Simply microwave for 20-30 seconds or let thaw overnight for a quick, protein-packed breakfast.

Ingredients

  • 2 Banana’s

  • ½ Cup of Apple Sauce

  • 2 Eggs

  • 1 Tsp vanilla extract

  • ¾ Cup greek yogurt

  • ¼-1/2 Cup maple syrup

  • 2 Cups of flour

  • 1 Scoop of vanilla protein (whey)

  • 1 Tsp baking soda

  • 2 Tsp baking powder

  • ½ Tbsp cinnamon

  • 1 Chopped red apple

  • Chocolate chip cookies (optional)


Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

  2. Mix Wet Ingredients: In a large bowl, mash the bananas until smooth. Add the applesauce, eggs, vanilla extract, Greek yogurt, and maple syrup. Whisk until well combined.

  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, vanilla whey protein powder, baking soda, baking powder, and cinnamon.

  4. Make the Batter: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing to keep the muffins light and fluffy.

  5. Fold in Apples: Gently fold in the chopped red apple and chocolate chips, if using.

  6. Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.

  7. Bake: Bake for 15-17 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

  8. Cool & Enjoy: Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack. Enjoy warm, or store in an airtight container for an easy breakfast or snack throughout the week. 🍎🧁
