Ingredients

  • 1 cup cashew butter (unsweetened, unsalted)

  • 1/2 cup pumpkin puree

  • 1 tsp vanilla extract

  • 1/2 cup maple syrup

  • 1 1/2 cups gluten-free rolled oats

  • 1/4 cup ground flax seeds

  • 1 tbsp pumpkin pie spice

  • 1/2 cup 70% dark chocolate chips


Instructions

  1. Mix Wet Ingredients: In a large bowl, combine 1 cup cashew butter, 1/2 cup pumpkin puree, 1 tsp vanilla extract, and 1/2 cup maple syrup. Stir until smooth.

  2. Add Dry Ingredients: Add 1 1/2 cups gluten-free rolled oats, 1/4 cup ground flax seeds, and 1 tbsp pumpkin pie spice. Mix until fully combined.

  3. Incorporate Chocolate Chips: Fold in 1/2 cup 70% dark chocolate chips.

  4. Form Bars or Bites: For bars:place into a 8x8 glass dish and smash down until smooth. For bites: Scoop tablespoon-sized portions and roll into 24 balls (about 32g each). Use slightly wet hands to prevent sticking.

  5. Chill: Place bars or bites on a parchment-lined tray and refrigerate for 30 minutes to firm up.

  6. Serve or Store: Enjoy immediately or store in an airtight container in the fridge for up to 1 week or freezer for up to 1 month.

🥜 Prefer peanut butter? No problem, swap out the cashew butter

💪 Looking for more protein? Add in 1 scoop of vanilla protein powder and add another 1/4 C of pumpkin for moisture

🍫  Dark chocolate provides magnesium and antioxidants, always aim for 70% dark or higher!

🍦 How to doctor it up? Bake the batter in bar form by mixing the batter with 2 eggs and bake for 30-minutes. Serve topped with Greek yogurt for a warm/cool crumbly combo 😋 

❓ Did you know? Ground flaxseeds, rather than whole seed, allows the omega-3 content to be more bioavailable (absorbable) and cause less GI distress.
