Loaded Creamy Mushroom Chicken Sweet Potatoes

Fluffy baked sweet potatoes are piled high with a savory mushroom-spinach mixture and a rich, tangy tahini-Greek yogurt sauce. Hearty, flavorful, and satisfying, the perfect weeknight dinner or meal prep option that actually supports your body!

Ingredients
3 medium sweet potatoes, washed and fork-pierced
1 lb ground chicken
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups mushrooms, sliced
4 cups fresh spinach
½ tbsp garlic salt
Salt & black pepper, to taste
Tahini Yogurt Sauce
¼ cup tahini
¾ cup low-fat Greek yogurt
Juice of ½ lemon
Zest of ½ lemon
¼ tsp black pepper
¼ tsp salt
Instructions:
Bake Sweet Potatoes: Preheat oven to 400°F. Place pierced sweet potatoes on a baking sheet and bake for 50–55 minutes, until fork-tender.
Cook Chicken Mixture: While potatoes bake, heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3–5 minutes until translucent.
Add Aromatics & Veggies: Stir in minced garlic and sliced mushrooms. Cook for 7 minutes until mushrooms release their liquid and begin to brown. Add spinach and cook until wilted (2–3 minutes).
Make Sauce: In a bowl, whisk together tahini, Greek yogurt, lemon juice, lemon zest, salt, and pepper until smooth and creamy.
Combine: Reduce skillet heat to low. Pour the tahini yogurt sauce into the chicken-mushroom mixture and stir until everything is well coated and creamy. Season with garlic salt, salt, and pepper to taste.
Assemble: Slice open the baked sweet potatoes and fluff the flesh with a fork. Generously spoon the creamy mushroom chicken mixture over each potato. Serve warm.
