Mango Chia Jam

This week's recipe is a refreshing Mango Chia Jam made with ripe mangoes, fresh lime juice, and fiber-rich chia seeds. Naturally sweetened with a touch of honey, this quick homemade jam comes together in just minutes and is perfect for spreading on toast, swirling into yogurt, topping oatmeal, or adding a burst of tropical flavor to your favorite snacks.

Servings: 1 Jar (16 Tablepoons)


Ingredients

  • 2 cups ripe mango, diced (fresh or frozen)

  • 2 tbsp honey or maple syrup (optional, adjust to taste)

  • Juice of ½ lime

  • 2 tbsp chia seeds


Instructions:

  1. Combine: Add diced mango, honey, and lime juice to a small saucepan over medium heat.

  2. Simmer: Cook for 5–7 minutes, stirring occasionally, until the mango softens.

  3. Mash: Mash the mango with a fork or potato masher, leaving it as chunky or smooth as you like.

  4. Stir: Remove from heat and stir in the chia seeds. Let the mixture sit for 5–10 minutes while the chia seeds naturally thicken the jam.

  5. Cool & Store: Transfer to a clean jar and refrigerate. The jam will continue to thicken as it cools.
