Nice Cream

Hitting you with another dessert! I am a balanced dietitian, so you should NEVER feel guilty about what you are eating. It simply can create a poor relationship with food.

Yet, when cravings are high and you still want to honor and support your health goals, there are "meh" choices, good choices, and better choices. Only serving "better" choices to your inbox.

Friends, meet "nice-cream."

Frozen bananas blend into ultra-creamy soft-serve. You can then flavor it with rich cocoa, vanilla, cinnamon, and a splash of coconut milk for smoothness.

Go even further and swirl in peanut butter and fold in dark chocolate chips for that irresistible PB-chocolate combo.

Naturally sweetened by fruit, high in potassium (from bananas), antioxidants (from cocoa), and healthy fats (from peanut butter), it's satisfying, energizing, and feels like indulgence without the guilt. Ready in minutes, perfect for hot days, post-workout treats, or late-night cravings!

Shout out to my client and dear friend, Laurel M. for the cutest and best food processor to whip up these bananas!

Let’s dig in!

  • ½ tsp ground cinnamon

  • ¼ cup dark chocolate chips (70%+ cacao for lower sugar)

Instructions:

Horchata nice cream

  1. Blend Base: Add frozen banana slices, coconut milk, cocoa powder, vanilla extract, and cinnamon to a high-speed blender or food processor. Blend on high, scraping sides as needed, until thick and creamy (1–3 minutes). Add a tiny splash more milk only if it won't blend smoothly.

Part 2:

  1. Add Peanut Butter: Spoon in peanut butter and pulse 4–6 times to create ribbons/swirls (or blend fully for even peanut butter flavor).

  2. Fold in Chips: Transfer to a bowl and gently fold in dark chocolate chips by hand (to keep them chunky and prevent melting).

  3. Serve: Scoop immediately for soft-serve texture. For firmer scoops, freeze 15–30 minutes. Top with extra peanut butter drizzle, more chips, or a pinch of sea salt if desired. Enjoy fresh!
