New to cooking with miso paste or mirin? You can typically find both at H-Mart, local Asian grocery stores, or sometimes in the Asian foods section of your regular grocery store. White miso paste adds a savory, umami flavor, while mirin brings a subtle sweetness that balances the sauce beautifully. Both are great pantry staples to keep on hand for easy, flavor-packed meals!

Let’s dig in!

Total time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes

Servings: 4

Ingredients

For the Miso Ginger Beef:

  • 1 lb ground beef

  • 2 tablespoons olive oil

  • 2 tablespoons mellow white miso paste

  • 2 tablespoons freshly grated ginger, divided

  • 2 tablespoons mirin or rice wine vinegar

  • 3 tablespoons tamari

  • 2 tablespoons honey

  • 2 cloves garlic, minced or grated

For the Broth:

  • 1 tablespoon olive oil

  • 2 cups chicken bone broth

  • 2 tablespoons tamari

  • ½ teaspoon freshly grated ginger

For Serving:

  • Cooked white rice

  • Green onion, thinly sliced

  • Bok choy

  • Chili garlic oil (optional)

  • Sesame seeds (optional)

Instructions:

  1. Prepare the Miso Sauce: In a small bowl, whisk together the miso paste, 2 tablespoons of grated ginger, mirin or rice wine vinegar, 3 tablespoons of tamari, honey, and garlic until smooth.

  2. Cook the Ground Beef: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain excess grease if desired, then remove the beef from the pan and set aside.

  3. Prepare the Broth: Add 1 tablespoon of olive oil to a clean pan over medium heat. Add the remaining ½ teaspoon of grated ginger and sauté for 1–2 minutes. Pour in the chicken bone broth and the remaining 2 tablespoons of tamari. Bring to a simmer, stirring to release any ginger from the bottom of the pan. Turn off the heat once simmering.

  4. Coat the Beef: Pour the prepared miso sauce over the cooked ground beef and stir until evenly coated. If needed, add a small splash of warm broth to help distribute the sauce.

  5. Grill the Bok Choy: Once the beef has finished cooking in the sauce, remove it from the pan and set aside. Add the bok choy to the same pan and sauté until tender, allowing it to absorb the flavorful miso-ginger sauce and beef drippings.

  6. Assemble the Bowls: Add a scoop of cooked white rice to each bowl. Ladle the warm broth over or around the rice, then top with the miso ginger ground beef.

  7. Garnish & Serve: Finish with sliced green onions, chili garlic oil, and/or sesame seeds. Adjust the toppings to your taste and enjoy warm.

🫘 Miso is a fermented soybean paste that adds rich umami flavor to dishes. White miso is generally milder and slightly sweeter than darker varieties, making it a great choice for sauces and broths.
